Rice Noodles | 120g (2 nests) |
Oyster Sauce | 2 Tbsp |
Light Soy sauce | 1 Tbsp |
Fish Sauce | 1 Tbsp |
Coconut Sugar | 1 Tbsp |
Garlic Cloves | 2 pieces |
Tofu (cubed) | 150g |
Broccoli florets | 100g |
Bell Pepper | 1 piece |
Cherry Tomatoes | 4 pieces |
Baby Corns | 60g |
Mushrooms | 60g |
Cook the rice noodles
Boil the rice noodles for about 5 minutes until they’re soft. Drain the noodles and then rinse them thoroughly with cold water, this will prevent them from cooking further and becoming too soft to use.
Prepare the seasoning sauce
In a glass jar combine oyster sauce, soy sauce, fish sauce and coconut sugar. Mix well and set aside.
Stir fry the vegetables
Heat vegetable oil in a pan. Add garlic, tofu, broccoli florets, bell peppers, baby corn, cherry tomatoes and mushrooms. Stir-fry for about 2 minutes.
Add noodles and seasoning sauce
Stir in rice noodles and seasoning sauce. Stir fry until cooked through and serve immediately.
